A unique combination of backgrounds with husband-and-wife Rob and Gabrielle, Forester and Herbalist led to the creation of BIRKENTREE.
Rob is a professional forester with many years’ experience in managing woodlands. He oversees a range of woodlands and estates including the ancient birch woods that we harvest our Birchwater from.
Gabrielle has a long background in herbology and the many uses of native plants. She uses this knowledge and expertise to understand the applications and science of Birchwater. Birken is the old Scots word for birch, and In Scotland birch tapping has been carried out traditionally and sustainably for over 5,000 years. Sacred in Celtic mythology the birch was revered for its purity and life-giving properties. Highlanders of old would tap Birch trees in early Spring and drink the sap as a health tonic.
Our BIRKENTREE Highland Birchwater has been specially introduced to pair with fine whiskies. Unlike spring waters, it does not dilute whisky - it enhances and complements, with a tasting experience that is unique and refined, allowing the depth, flavours and layers of your dram to linger on the palate.
The term Birchwater is used, because unlike other tree saps it is not sticky and sweet. The ancient Birch trees that we work with produce an exceptionally fine sap which has been described as ‘the champagne of Birchwater’.
Based in Highland Perthshire, Scotland, we tap our Birchwater from Scottish Highland birch trees which are up to 300 years old, producing the 1st dedicated whisky pairing of its kind; a unique and luxurious alternative to any other whisky mixer on the market. Our extraction process is entirely sustainable, and our Birchwater is completely pure.
