PERSONAL AND IMAGINATIVE CAKES
Hi, I’m Ellie and I specialise in detailed, creative and imaginative fondant-covered cakes I want my cakes to wow, and with that in mind, I spend lots of time getting the details just right for the intended recipient.
My love of baking came about initially from watching my grandfather in his bakery, my mum carried on by sharing her favourite recipes passed down to her and even some of my grandfather’s prized recipes from the bakery. I still use his recipe for lemon curd. I was fortunate to have a wonderful home economics teacher who taught me to how to time manage as well as to feel proud of the meals that I prepared and brought home to my parents after school.
Later in life, when I moved to Denmark, I continued learning new culinary and baking skills, including a different type of cake compared to the traditional buttercream cakes that I was used to, this style were filled with light fruit-flavoured mousse. Working with this style of cake, meant learning a new way of assembling and managing cakes, it was at times difficult but it was a great sense of accomplishment when I completed my first ever 3-tier mousse cake… and it didn’t collapse, thank goodness.
A few years ago I moved back to Scotland and I have come full circle by going back to the style of cakes that I grew up with. I’ve taken numerous courses in sugar flowers, figures & characters and chocolate making. I’m registered and fully certified with both hygiene & allergen certificates.
