“Born in Glasgow 1977, upon leaving school in 1995, I started a government training scheme (YTS) in the catering trade which led me to my first professional job within the 5 Star Glasgow Hilton Hotel.
I spent a period of time abroad in Annecy, France, working in a 1 Michelin star restaurant, followed by a stint in Luxembourg, working in a small boutique luxury hotel.
My career then took me to Cameron House Hotel, Loch Lomond (One Michelin Star), thereafter The Balmoral Hotel, Edinburgh.
Most of my career was spent with acclaimed Edinburgh Chef Martin Wishart, who I worked alongside for 19 years.
I identified with Fonab Castle and particularly being able to work with some of the best local produce in the world.
From deer to salmon, langoustines to cheese, I am simply spoilt for choice…and the best thing of all is it is right on my doorstep!”
